The blade is forged from V-Gold No. 10 (VG-10) high-carbon stainless steel — one of the most respected knife steels in Japan — and finished with a stunning 33-layer Damascus pattern produced through repeated folding and forging in the traditional Japanese method. Ground to a steep 15-degree edge and hardened to 59-60 HRC, it takes and holds an exceptionally fine edge. Full-tang construction and a laminated wooden handle complete a knife built to last a lifetime.
Best for detail work — garnish, herbs, small vegetables, boneless fish, and precision slicing. Made in Japan — proudly forged in Seki, the historic home of Japanese cutlery.
