This slicing knife brings together cutting-edge steel technology, sleek modern lines, and centuries of Japanese knife-making artistry in a single, striking blade.
At its core lies FC61 fine carbide super steel, forged through a 49-layer construction and wrapped in 48 alternating layers of stainless steel. The result is a stunning Damascus pattern paired with a wavy katana-style edge — as beautiful as it is functional. Each blade is FRIODUR ice-hardened to achieve exceptional hardness (60–62 HRC) and long-lasting sharpness, then finished with a fine, hand-applied Honbazuke edge for precision cutting performance.
The Sujihiki is a traditional Japanese slicing knife purpose-built for effortless, clean cuts through meat, fish, roasts, and other large cuts — where a long, narrow blade makes all the difference in reducing drag and preserving texture.
Balancing the blade is an ergonomically shaped black Pakka wood handle, accented with a decorative steel mosaic pin, a red ring, and a logo end-cap — a refined finish to match the craftsmanship of the blade itself.
Every MIYABI Kaizen knife is handcrafted in Seki, Japan, a city with a centuries-old legacy of bladesmithing excellence.
