The MIYABI KAIZEN II 5000FCD Shotoh Knife is a precision-crafted Japanese petty knife designed for detailed cutting tasks such as trimming meat, slicing fruit, and preparing vegetables. Featuring a fine carbide FC61 steel core, this blade delivers exceptional sharpness, edge retention, and long-lasting performance. The core is encased in 48 layers of stainless steel, creating a striking Damascus pattern unique to each knife.

Using the traditional Honbazuke sharpening process, the blade is ground, honed, and polished to achieve razor-like sharpness along its entire length. The FRIODUR ice-hardening process further enhances durability and corrosion resistance, reaching a Rockwell hardness of approximately 61.

The ergonomic Pakka wood handle, finished with a decorative steel mosaic pin and stainless steel end cap, provides balance, comfort, and visual elegance. Handcrafted in Seki, Japan, this knife embodies centuries of Japanese craftsmanship.

For best results, hand wash only and maintain the edge using whetstones. A wooden cutting board is recommended to preserve sharpness and blade integrity.
