Seamless Stainless Steel from Niigata, Japan

Global knives first appeared in 1985, the result of a collaboration between designer Komin Yamada and the craftsmen at Yoshikin in Niigata. What set them apart from the beginning was a different way of thinking about kitchen tools—clean, balanced, and built as a single, seamless piece.

Each knife is made from CROMOVA 18 stainless steel, shaped in one continuous form rather than assembled from parts. This not only improves durability but also makes the knife easier to maintain over time. The distinctive dotted handle isn’t just visual—it’s designed to sit comfortably in the hand and provide a steady grip, even during longer prep sessions.

The blades are sharpened with a double-bevel edge, offering a level of control that suits both precise cuts and everyday use. Whether it’s a chef’s knife, santoku, or a smaller utility blade, the collection focuses on consistency, balance, and reliability rather than unnecessary complexity.
